Take a look at our local farmer’s markets and you’ll notice the wonderful selection of pears arriving each week. Pears have a tantalizing aroma that reminds us pleasantly of crisp fall days to come. There are many varieties available, from the familiar Bosc, Anjou, and Bartlett, to the more unusual fruity and fine textured Comice, and the tiny, crunchy Seckle and Forelle cultivars. It’s easy to find ways to enjoy this delicious source of dietary fibre, or to simply eat them out of hand.
Here’s a suggestion for a bright and fragrant end of summer salad using Anjou or Comice pears from your favourite farmer’s market. Remember, the farmer’s market is a great source for the healthiest, local produce and dairy products, so choose only the freshest, unprocessed organic ingredients for your meals – you are what you eat!
Ingredients:
- 2 c rocket or arugula
- 3 c Boston or butter lettuce
- 1c radicchio, torn
- 2 oz crumbled blue cheese, preferably Stilton
- 1 Anjou or Comice pear, thinly sliced
- 1 rib of celery, thinly sliced on the bias
- 2 Tbsp light olive oil
- 2 Tbsp blueberry or other berry vinegar
Directions:
On each of 2 plates, make a bed of butter or Boston lettuce. Then top with a handful of arugula, then the torn radicchio.
Arrange pear and celery slices over top and sprinkle with crumbled Stilton.
Whisk together the olive oil and fruit vinegar, seasoning with sea salt and cracked black pepper to taste. Drizzle vinaigrette over salads and serve.
Makes 2 dinner-sized salads.
