Spring is the perfect time to enjoy fresh garden greens, bountiful berries, and a wide range of crisp, satisfying flavours. A Saturday morning stroll through the Farmer’s Market is a feast for the senses and a great place to find fresh, locally grown organic fruits and vegetables that not only promote good health, but also star in fun and easy recipes like this Butter Lettuce featuring Raspberry Chia Seed Vinaigrette. Gather your favourite colours, textures and flavours and get creative!
INGREDIENTS:
- ⅓ cup water + 1 tsp chia seeds
- ⅓ cup fresh or frozen organic raspberries
- ⅓ cup chopped red onion
- ¼ cup red wine vinegar
- ½ cup white vinegar
- ⅓ cup extra virgin olive oil
- ½ tsp fresh ground black pepper
- 1 ½ tsp course prepared mustard
- 1 ½ tsp sea salt
- ½ tsp dry mustard
- 3 tbsp organic cane sugar
METHOD:
Soak chia seeds in water, stirring occasionally for 15 minutes. In the meantime place all other ingredients into a blender, add chia seeds and water. Blend at low, progressing to high speed over 2 minutes. Pour into sealable, non-reactive container. Refrigerate. Keeps for up to 2 weeks refrigerated. Shake well before serving with favourite salads.
Contains no citrus, dairy, soy or GLUTEN
